Avocado cream soup with crab and garlic croutons
With crab and garlic croutons - Delicate and delicious
Ingredients
- 2 ripe avocados
- 250g crabmeat
- 500ml chicken stock
- 250ml dry, white wine
- 1 carton of crème fraiche
- 2 shallots, finely chopped
- 1 finely chopped clove of garlic
- Fresh dill, finely chopped
- 1 lime
- ½ a soupspoon of wasabi
- Some sesame oil
- 2 slices of toasted bread cut into squares, without crust.
Preparation
- Fry the shallots, garlic and chilli in some oil until soft and glassy.
- Add the avocado and a soupspoon of flour and stir.
- Add the chicken stock, white wine and crème fraiche and allow to simmer for 10mins.
- Blend the soup in a blender with some lemon juice and lemon zest (to taste) and then add the fresh dill
Serving suggestion
- Pre-heat the bowls.
- Place the crabmeat and the soup in the bowls and pour a little crème fraiche in each bowl, making a pretty pattern.
- Top that with some garlic croutons and a piece of dill.
