Avocado cream soup with crab and garlic croutons

With crab and garlic croutons - Delicate and delicious

Ingredients

  • 2 ripe avocados
  • 250g crabmeat
  • 500ml chicken stock
  • 250ml dry, white wine
  • 1 carton of crème fraiche
  • 2 shallots, finely chopped
  • 1 finely chopped clove of garlic
  • Fresh dill, finely chopped
  • 1 lime
  • ½ a soupspoon of wasabi
  • Some sesame oil
  • 2 slices of toasted bread cut into squares, without crust.

Preparation

  1. Fry the shallots, garlic and chilli in some oil until soft and glassy.
  2. Add the avocado and a soupspoon of flour and stir.
  3. Add the chicken stock, white wine and crème fraiche and allow to simmer for 10mins.
  4. Blend the soup in a blender with some lemon juice and lemon zest (to taste) and then add the fresh dill

Serving suggestion

  1. Pre-heat the bowls.
  2. Place the crabmeat and the soup in the bowls and pour a little crème fraiche in each bowl, making a pretty pattern.
  3. Top that with some garlic croutons and a piece of dill.
