Beef and vegetable stew “Buntes Huhn”
This is a delicious and hearty stew from the Lower Saxony. It is called
Ingredients
- 500g of ribs or beef
- 500g white beans
- 300g carrots cut into chunks
- 100g peeled celery, cut into chunks
- 2 young leeks cut into chunks
- 250g peeled potatoes cut into chunks
- 150g smoked bacon, cut into chunks
- 2 medium sour apples
- Some vinegar
- Spices
Preparation
- Soak the white beans the day before in water.
- Add the beef and 2 litres of water to the beans and soaking water and cook for approximately 90 minutes until the beans are soft.
- While the beans are cooking, cut the potatoes, carrots, leeks and celery into 1x1cm large chunks and add them to the pot approximately 20 minutes before the beans are cooked.
- Lay the bacon pieces out, cover with sliced onion and sprinkle with paprika before adding it to the pot.
- Cut the beef into 2x2cm chunks and add to the stew.
- Slice the sour apples and add to the stew in the last minute.
- Add salt, pepper and approximately 20mo of vinegar to taste.
Serving suggestion
- Serve in a terrine or portion out on a plate and serve with a delicious, fresh loaf of bread.
