Delicious, Northern European Salmon Dish

A fast and fashionable summer salmon recipe for housewives and business women with little time to cook fancy meals.

Ingredients

  • 200g Norwegian Gravad Salmon
  • 200g lemon salmon
  • ½ a fresh smoked eel
  • 4 Dutch Herring fillets
  • 1-2 sour apples
  • 30g cold tossed cowberries
  • 1 jar of creamy horseradish sauce
  • Gravad Salmon sauce (usually free with the salmon)
  • 1 lemon
  • Salad vegetables, depending on what is in season - Ricola, Ice berg lettuce, cherry tomatoes, mushrooms, radishes, fresh herbs such as parsley, chives, dill, watercress and marjoram, etc.

Preparation

  1. Herb French dressing: Mix together salt, pepper, sugar, mustard, oil and blend using an egg-beater or mixer
  2. Fresh summer salad: Rinse lettuce in cold water and cut into bite-size pieces. Cut the cherry tomatoes into halves. Cut the radishes and mushrooms in to very thin slices, cover in herb French dressing and mix.
  3. Cowberry horseradish: A jar of horseradish mixed with whipped cream, salt, pepper, sugar and lemon juice. To complete, add two tablespoons of cowberries.
  4. Apple slices for the Herring fillets: Peel the apple and remove the core. Slice the apple into 1-2cm thick slices. Blanche in white wine and sugar for 1 min and allow to cool

Serving suggestion

  • Place a large portion of the fresh, colourful and tasty salad in the centre of the large, decorative plate.
  • Cover the salad with the radish slices, thinly sliced mushrooms and halved tomatoes.
  • Place an apple slice, topped with a rolled herring fillet and a heaped teaspoon of cowberry horseradish on the plate.
  • 1-2 pieces of smoked eel garnished with lemon salmon fillets. Shape the Gravad Salmon and the lemon salmon like a little rose and top with horseradish.
  • You could also serve Baguette or whole wheat bread with the Herring fillets and butter with a delicious local lager of your choice.
