Fish Ragout in Riesling Cream

Salmon, Halibut, King Prawns and German Riesling combined in one dish, no need to say more!

Ingredients

  • 400g fresh salmon fillet
  • 400g fresh halibut fillets
  • 12 peeled king prawns
  • 1 bunch of spring onions
  • 1 bunch of mini carrots
  • 250g fresh, white mushrooms
  • 2-3 shallots chopped into small chunks
  • 1/2l dry Riesling
  • 1 carton of crème fraiche
  • A little cold butter
  • Seasoning (salt and pepper)

Preparation

The vegetables:
  1. Brush and wash the spring onion and carrots.
  2. Cut them into pieces approx. 3 cm long.
  3. Blanch them briefly in salted water.
  4. When they are „al dente", chill them.
  5. Rub salt, a little flour and lemon juice into the mushrooms.
  6. Add a little cold water over the mushrooms.
  7. Blanch them quickly.
The fish:
  1. Sweat the minced shallots.
  2. Use a little butter in a pan of adequate size.
  3. Wash the fillets under running water.
  4. Then dry them carefully with paper towel.
  5. Cut them to equal-sized small pieces of 2cm.
  6. Add them to the previously sweated shallots.
  7. Season it all with salt and pepper in the pan.
  8. De-glaze it with Riesling.
  9. Cover it and allow to simmer at moderate temperature for approx. 2-3 minutes.
  10. Take the fish out and put it aside, making sure to keep it warm.
  11. Remove the guts from the tail from the prawns.
  12. Season the prawns and sear them quickly in olive oil - heat each side for 2-3 minutes.
  13. Let them, for now, "sitting“ in the heat of the pan.
The Sauce:
  1. Pour a carton of crème fraiche into the pan with the liquid in it.
  2. Let it cook and reduce to a lower volume.
  3. Check the taste and the consistency.
  4. If the sauce is not already viscid add a little starch.
  5. Mix a little cold butter into it.
Meanwhile:
  1. Sauté the blanched vegetables.
  2. Use brown butter in a frying pan.
  3. Spice them with salt, pepper and nutmeg.

Serving suggestion

  • Place the fish and the prawns onto the plates.
  • Cover them lightly with the sauce.
  • Arrange the colorful vegetables on top.
  • Possible side dishes include shaped little potatoes, Basmati rice or a little crispy puff pastry.
  • A suitable beverage would be a cool glass of Riesling, preferably the one you used during the cooking.
