Greek Salad with Feta Cheese
A delicious salad with the colours of summer
Ingredients
- 125g feta cheese
- 300g fresh, wide runner beans
- 50g small white beans
- 250g small cherry tomatoes
- 1 small carton/jar/tin of artichokes
- 10-12 shallots
- 1-2 cloves of garlic
- Some cold-pressed olive oil
- Some white balsamic vinegar
- Lemon zest of half a lemon
- 1-2 twigs of thyme or lemon thyme
- Spices
Preparation
- Cook the white beans in salt water until soft.
- Cut the feta cheese into 1cm x 1cm thick cubes
- Clean the runner beans and blanche with some summer savory in salt water until ‘al dente’
- Remove, cool and cut into 3cm thick diamond shapes
- Peel the shallots, cut into equal sizes and blanche in salt water until ‘al dente’, remove and allow to cool
- Separate the artichokes
- Dressing: fry 2 of the finely chopped shallots with the chopped garlic, salt, pepper, sugar, balsamic vinegar and water to make a tasty dressing
- Cover the white and green beans, artichokes and shallots with the salad dressing
- Add the cherry tomatoes to a frying pan and add hot olive oilt, fry for a minute or to to soften slightly and then add to salad
- Add finely chopped thyme and some olive oil.
Serving suggestion
- Decorate with some feta cheese and serve in a large salad bowl
