Greek Salad with Feta Cheese

A delicious salad with the colours of summer

Ingredients

  • 125g feta cheese
  • 300g fresh, wide runner beans
  • 50g small white beans
  • 250g small cherry tomatoes
  • 1 small carton/jar/tin of artichokes
  • 10-12 shallots
  • 1-2 cloves of garlic
  • Some cold-pressed olive oil
  • Some white balsamic vinegar
  • Lemon zest of half a lemon
  • 1-2 twigs of thyme or lemon thyme
  • Spices
 

Preparation

  1. Cook the white beans in salt water until soft.
  2. Cut the feta cheese into 1cm x 1cm thick cubes
  3. Clean the runner beans and blanche with some summer savory in salt water until ‘al dente’
  4. Remove, cool and cut into 3cm thick diamond shapes
  5. Peel the shallots, cut into equal sizes and blanche in salt water until ‘al dente’, remove and allow to cool
  6. Separate the artichokes
  7. Dressing: fry 2 of the finely chopped shallots with the chopped garlic, salt, pepper, sugar, balsamic vinegar and water to make a tasty dressing
  8. Cover the white and green beans, artichokes and shallots with the salad dressing
  9. Add the cherry tomatoes to a frying pan and add hot olive oilt, fry for a minute or to to soften slightly and then add to salad
  10. Add finely chopped thyme and some olive oil.

Serving suggestion

  • Decorate with some feta cheese and serve in a large salad bowl
