Homemade Büsumer Crab Salad

Make it yourself, just this once.. you'll taste the difference!

Ingredients

  • 350 - 400g fresh crab meat
  • 2 hard boiled eggs
  • 100g fresh, white mushrooms
  • 1 large, sour apple
  • 80g good mayonnaise
  • 3 tbsp. good tomato sauce
  • Some freshly grated horseradish
  • 40ml of Cognac or brandy
  • 125ml of firm whipped cream
  • Juice from half a lemon
  • Salt, pepper, ground chilli or cayenne pepper

Preparation

Firstly, I marinade the crab meat in a marinade for about an hour.
  1. The marinade: Place a little salt, pepper, cayenne pepper or ground chilli, lemon juice and cognac or brandy in a bowl with the crab meat.
  2. Remove the meat from the marinade and place in a colander. The aim is to drain some of the marinade away so as not to dilute the cocktail sauce.
  3. Brush the mushrooms and rinse under running water and cut into small cubes.
  4. Sprinkle mushrooms lightly with salt and 3 tbsp. of lemon juice and 1 tbsp. of flour.
  5. Likewise, the hard-boiled egg and the apple.
  6. Add 3 tbsp. of good tomato sauce, 3 ttbsp. of good mayonnaise and 1 heaped tbsp. of freshly grated horseradish.
  7. Mix everything together loosely and fold in the whipped cream
  8. The cocktail sauce should taste spicy and should come across as something "sweet".

Serving suggestion

Serve the crab salad and cocktail sauce on salad leaves with a lemon wedge or two and a few slices of boiled egg. Freshly baked crispy bread and salted butter can be served on the side.
