Lemon Grass Soup with Shrimps

Quick and easy prepared - tasty and delicious

Ingredients

  • 1l chicken broth (home-made, if possible)
  • 150-200g shrimps
  • 3-4 stems of lemon grass from a Chinese shop of your choice
  • 1 lime
  • Fresh ginger
  • 1/2 chilli pepper
  • 1 clove of garlic (optional )
  • 2 leeks
  • A bit lemon balm
  • Seasoning (salt and pepper)

Preparation

  1. Press the lemon grass and put it into the hot chicken broth and allow to cool.
  2. Add a lime zest.
  3. Juice of the lime, the chilli pepper and the garlic clove.
  4. Keep the broth simmering for 20 minutes allowing a light, refreshing citrus flavour to develop.
  5. Strain the broth through a towel.
  6. Taste the soup and add the sliced leek, a few minutes before serving.

Serving suggestion

  • Warm the shrimps in the fresh soup and serve them with a small pie.
  • Lightly garnish with leaves of lemon balm.
