Onion Pie with grapes, rosemary and goats cheese

The autumn and winter classic – spicy, quick and easy.

Ingredients

For the Dough (enough to cover a standard baking tray) :
  • 20g fresh yeast (1/2 a cube)
  • 200g flour
  • 125 luke-warm water
  • 2 spoons of Olive oil
  • some salt
For the filling:
  • 300g of onion, sliced into thin slices.
  • 600g de-seeded grapes, mixed white and red, washed and halved.
  • 200g goats cheese, broken
  • 1 Tbsp. of honey
  • 2 tbsp. of Rosemary, chopped.

Preparation

  1. Break-up the yeast with some salt in luke-warm water and stir with the honey until smooth.
  2. Sieve the flour and add the olive oil and yeast – water mixture.
  3. Mix with a hand beater until smooth, and cover with a kitchen towel.
  4. Place in a warm part of the kitchen for 30-40mins, until the mixture volume has doubled.
  5. Place the dough on a flour-covered surface and knead. Roll out until dough is about the same size as the baking dish. Line the baking dish with baking paper and fill the baking dish with the dough. Cover with another baking tray and allow to stand for another 20mins. in a warm part of the kitchen.
  6. Add the onions, chopped rosemary and grapes and cover with goat’s cheese.
  7. Place dish in a pre-heated oven @ 200° C for 35 minutes.

Serving suggestion

Cut the pie into slices and serve warm.
