Soup of Lemon Grass with Shrimps

Discover a new way to enjoy shrimps!

Ingredients

  • 1l chicken broth (home-made if possible)
  • 150-200g shrimps
  • 3-4 stems of lemon grass
  • 1 lime
  • A little fresh ginger
  • ½ hull of chilli
  • 1 clove of garlic (optional)
  • 2 sticks leek
  • A little lemon balm
  • Seasoning (salt and pepper)

Preparation

  1. Press the lemon grass vigorously and put it into the hot chicken broth.
  2. Allow the mixture to cool.
  3. Add a little peel and juice of the lime.
  4. Add then the hull of chilli and the clove of garlic.
  5. Heat the broth and allow to simmer for 20 minutes.
  6. Strain the broth carefully through a towel.
  7. Taste the soup.
  8. Add the stripes of leek a little minutes before serving.

Serving suggestion

  • Warm up the shrimps in the fresh soup.
  • Serve with a little pie garnished with leaves of lemon balm.
