Starwberry Parfait

Strawberry Parfait with Cointreau

Delicious during any season with matured strawberries

Ingredients

  • ½ l cream
  • 6 egg yolks
  • 125g sugar
  • 500g matured strawberries
  • A little zest of lemon
  • Juice of a complete lemon
  • 4 cl Cointreau

Preparation

  1. Clean and blend the strawberries.
  2. Sieve and add lemon juice.
  3. Whisk the vanilla with egg yolk and sugar in a bowl placed in a warm water-bath or "Bain Marie“ (after a French cook named Marie who invented this method) until the volume has increased significantly.
  4. Add a little zests of organic lemons and Cointreau.
  5. Allow to cool.
  6. Add the whipped cream in two steps.
  7. 'Grease' a cake tin with butter or margarine and add the parfait into it.
  8. Freeze over night for at least 5-6 hours.

Serving suggestion

  1. Arrange on a puree of strawberries containing Cointreau, or marinated fresh strawberries.
  2. You might garnish it with a leaf or mint.
