Summer Salad with Avocado and King Prawns

Ingredients

  • 2 mature avocados, cut into round pieces
  • ½ medium-sized melon, cut into round pieces
  • 2 oranges, split into slices
  • 6 stalks of asparagus, cut into pieces
  • 250g king prawns
  • 1 lemon
  • ½ small hull of chili in little cubes
  • a little freshly chopped tarragon
  • a bit of white Balsamic vinegar
  • salt and pepper

Preparation

  1. Cut the avocados in halves and cut out little globes.
  2. Put the rinds aside for later.
  3. Season them with salt, pepper and chili.
  4. Add minced tarragon, Balsamic vinegar and a bit of sugar.
  5. Add the juice and zest of one lemon.
  6. Add the prepared pieces of melon and oranges and the king prawns.
  7. Peel the asparagus and cook it until “al dente”.
  8. Cut into pieces of the length of 3 cm each.
  9. Add them to the other vegetables.

Serving suggestion

Offer the salads in little bowls.
