Summer Salad with Avocado and King Prawns
Ingredients
- 2 mature avocados, cut into round pieces
- ½ medium-sized melon, cut into round pieces
- 2 oranges, split into slices
- 6 stalks of asparagus, cut into pieces
- 250g king prawns
- 1 lemon
- ½ small hull of chili in little cubes
- a little freshly chopped tarragon
- a bit of white Balsamic vinegar
- salt and pepper
Preparation
- Cut the avocados in halves and cut out little globes.
- Put the rinds aside for later.
- Season them with salt, pepper and chili.
- Add minced tarragon, Balsamic vinegar and a bit of sugar.
- Add the juice and zest of one lemon.
- Add the prepared pieces of melon and oranges and the king prawns.
- Peel the asparagus and cook it until “al dente”.
- Cut into pieces of the length of 3 cm each.
- Add them to the other vegetables.
Serving suggestion
