Turkey breast roll
With Parma ham, vegetables and goat’s cheese – the delicious Italian mini rolls – this time with turkey breast.
Ingredients
- 12 thin slices of turkey breast approximately 50g (3 pieces per person)
- 5-6 slices of Parma ham
- 100g of goats cheese or feta cheese
- 1 carrot, thinly sliced
- 100g of celery, thinly sliced
- 100g spring onion, thinly sliced into rings
- 1-2 finely chopped garlic cloves (also works without if you’d prefer a garlic-free meal)
- 1 sprig of time
- 4-5 dried tomatoes in oil
- Some butter and oil
- Some Parmesan cheese
- Spices
Preparation
- Fry the prepared vegetables in butter for a short period just until they are slightly soft, yet still firm to the bite. Add salt and pepper and allow to cool.
- Place the turkey breast on some clear film and tenderise until flat. Cut the Parma ham to the same size as the turkey breast.
- Place a slice of Parma ham, some vegetables, and dried tomato and feta cheese on top.
- Roll the contents in the turkey breast and place on a metal kebab stick.
- Cover in salt, pepper and some flour and fry in some butter or oil and a sprig of thyme on all sides until golden brown.
- Place in an oven-proof dish and sprinkle Parmesan cheese over the rolls. Place the dish in a pre-heated oven at 180°C for 5-6 minutes.
Serving suggestion
I like to serve my mini Italian rolls with some mixed vegetables such as peppers, marrow, onion and tomatoes with vegetable noodles or gnocchi.- August 1, 2011 Meat No comments
